Hungry Girl's Cinn-fully Good Choco-Nog

Ingredients:
One 25-calorie packet diet hot cocoa mix (like Swiss Miss Diet or Nestle Fat Free)
5 cups light vanilla soymilk, divided
1 small (4-serving) package sugar-free fat-free instant chocolate pudding mix
1 tsp. rum extract
1/2 tsp. cinnamon
1/4 tsp. ground nutmeg
Optional toppings: Fat Free Reddi-wip, additional cinnamon

Directions:
Combine cocoa mix with 1/4 cup hot water in a tall glass, and stir to dissolve. Add 1 cup soymilk and stir. Transfer to a blender.

Add remaining 4 cups soymilk and all other ingredients to the blender. Blend on high speed until smooth and uniform. Refrigerate in a covered container for at least a few hours to allow nog to thicken.

If you like, before serving, top each glass off with a squirt of Reddi-wip and a sprinkling of cinnamon. Enjoy!

Chocolate Hazelnut Biscotti

Preheat oven to 350 degrees F (180 degrees C).  To toast hazelnuts: spread on a baking sheet and bake for 15 minutes or until lightly browned and the skins begin to flake.  Remove from the oven and place nuts in a dish towel.   Roll up the towel and let the nuts 'steam' for 5 minutes and then briskly rub the towel (with nuts inside) to remove the skins from the nuts.  Cool and then chop coarsely.   Set aside while you prepare the dough.

You make the jello like normal.

Boil 2 cups of water
mix the boiling water with the jello mix
pour in 2 cups of cold water
then pick what alcohol you're going to use, if it's 80 proof, then it's 10 ounces. Any other proof I'll have to look the ounces up, I always use 80 proof.
Mix it in with the jello
Stick in the cups
Put in the fridge

Murray's Loaded Cornbread
 
2 boxes Jiffy Corn Bread mix, made according to directions
1 tube of Jimmy Dean Spicy Sausage
4 cups frozen corn
4 cups mozzarella cheese
2-3 jalapeños, diced
Hot sauce if desired
